yeah but as soon as I destroyed an enemy camp, they would rebuild the damned thing, before I could get back to check it :(

In that case, I'd just keep going on the same camp until everything was destroyed before retreating. And then just build a new camp there yourself.
Make sure to make use of the Heros special abilities, especially Gandalf (if you've got him) He's just awesome.
